Indian Arabica is grown almost entirely under shade at 1,000–1,700m across Karnataka (Chikmagalur, Coorg, Baba Budangiri), Tamil Nadu (Shevaroy Hills, Nilgiris), and Andhra Pradesh (Araku Valley). The dominant varieties — SL-795, Cauvery (Catimor), Chandragiri, and Kent — give Indian Arabica a recognisable profile: medium body, restrained acidity, and chocolate-and-spice sweetness rather than the sharp brightness of African or Central American washed lots. High-altitude SL-795 from Chikmagalur and Araku is where Indian Arabica reaches genuine competition quality — jasmine, peach, and clean citrus when washed; ripe stone fruit and berry when natural.
Indian Coffee Context
Arabica is the foundation of Indian specialty coffee. While India grows more Robusta by volume, almost every coffee positioned as 'specialty' — estate lots, single origins, competition coffees — is Arabica. Shade-grown under native canopy alongside pepper and cardamom, Indian Arabica has a distinct terroir signature. The challenge is altitude: most Indian growing regions sit lower than the prime Arabica belts elsewhere, so the best lots come from the highest estates with careful processing.
Recommended
Arabica is most rewarding on pour-over — V60 and Chemex let the aromatics and acidity show without added body. Use 92–96°C for light roasts and a 1:15–1:16 ratio. Indian Arabica also suits the traditional South Indian filter when you want a cleaner, brighter decoction than a Robusta-heavy blend gives. AeroPress is a forgiving everyday option.
