About Melkodige Anaerobic

Ripe red cherries with a Brix content over 24% are handpicked and washed in a water bath. They are then surface dried and inoculated with Lalcafe saccharomyces yeast. The cherries are placed in airtight containers for 72 hours of anaerobic fermentation, during which the yeast converts sugars into enzymes, esters, and alcohol, creating a unique flavor. After fermentation, the cherries are dried slowly on raised wooden trays for over twenty days.
