Salawara Mossto Anaerobic Washed (SCA 86+)

Introducing a delicate and expressive lot from Salwara Estate, processed using a 72-hour anaerobic Mosto fermentation followed by a slow 16-day nursery drying process. Rossette Coffee Lab has roasted this lot as a light roast, with the intention of bringing out the character of the estate, varietal and processing while preserving the coffee’s remarkable clarity. In the cup, expect layers of blueberry and Meyer lemon, followed by a soft melon-like sweetness and a subtle hint of dragon fruit. A gentle earthy sweetness runs underneath the fruit, adding depth without taking away from the coffee’s delicate character. What makes this coffee particularly interesting is the way it presents itself when brewed as a pourover. The cup is clean, light and incredibly nuanced, with a delicate structure that can easily remind you of a complex washed coffee from outside India. The anaerobic fermentation adds another layer of fruit and sweetness, but the profile remains restrained, elegant and transparent rather than overtly funky. This is a coffee to take your time with. As it cools, the fruit becomes more pronounced and the sweetness continues to develop, making it especially rewarding for manual brewing and for drinkers who enjoy coffees with clarity, finesse and complexity.
