Ashok Patre’s peach co-ferment has other ideas. The influence of the fruit is certainly there, lending a soft, syrupy sweetness that runs quietly through the experience. But it’s the melon character that steps forward with surprising confidence, giving this Catuai a ripe, juicy personality that feels both unusual and remarkably coherent. There’s plenty of sweetness, a vibrant structure and a richness that makes the fruit feel almost tactile on the palate. It’s a compelling reminder that co-fermentation isn’t simply about transferring the flavour of an added fruit into coffee.
