Forbidden Orchard is roasted exceptionally light, with the roast ending at the very beginning of the first crack. This gentle roast profile preserves the vibrant fruit character, delicate aromatics, and lively acidity developed during processing, allowing the coffee's natural sweetness and complexity to shine with remarkable clarity. Only perfectly ripe Chandragiri cherries from a single harvest at Kalyancool Estate were selected for this limited microlot. Every cherry was meticulously hand sorted before being sealed in an anaerobic environment, where the coffee underwent a carefully controlled 72-hour natural process fermentation guided by LALCAFÉ CIMA yeast. This extended fermentation was designed to enhance fruit expression, sweetness, and mouthfeel while preserving balance and the distinctive character of the estate. Following fermentation, the cherries were slowly dried on raised beds under carefully monitored conditions until the ideal moisture content was achieved. The coffee was then rested before hulling, after which the green beans were gravity sorted and meticulously hand sorted once again, ensuring that only the finest beans became part of this limited release. The cup presents layers of comforting caramelized apple, elegant orange blossom, rich black plum, and vibrant pineapple, creating a beautifully structured profile that evolves gracefully from the first sip to the last. Forbidden Orchard is a celebration of precision—from harvest to roast.
