Heisenberg Coffee from Riverdale Estate is Back! Since its debut in 2020, Heisenberg has become our anticipated annual release, evolving each season. Season 7 introduces the Iceberg Natural process. Sending from Riverdale Estate, Yercaud in Tamil Nadu, each cherry is handpicked, maximizing sugar content and mucilage density, vital for the natural process. The processor ensures only the ripest cherries progress, using a Brix meter for precise sugar measurement. Post-harvest, cherries are triple washed with natural spring water and undergo floating to remove underdeveloped beans. High-density cherries are then fermented with rose petals to enhance flavonoids, resulting in clean, bright fruit notes and a unique floral character. The cherries are slow-dried on raised beds for 30 days, ensuring even drying and air circulation for a vibrant, clean cup. After hulling in our dry mill, any defective beans are meticulously removed. To preserve freshness, our natural process coffees are vacuum-sealed, maintaining moisture between 11–13%. Roasted by Baninder Kochar, Head Roaster and Founder at Savorworks, this lot promises a clean, floral aromatic, and fruity balanced cup with notes of Osmanthus, dried prune, banana, and monk fruit, followed by Heisenberg's signature long, lingering finish. Season 7 is a new exploration of the Heisenberg series, a sensory journey designed to offer an unforgettable coffee experience.
