2025 New harvest Fruits Bomb features an innovative 56-hour Anti-Maceration Naturals process that delivers an outstanding cup and a captivating sensory journey. Carefully selected, ripened cherries at 25.2 Brix are harvested from the renowned Line Patte block. After removal of floaters, yeast and lactic acid bacteria are added in bio reactors and a 600 millibar vacuum applied. The cherries undergo 56-hour fermentation in a bio-reactor, all in a vacuum atmosphere. The cherries are slow-dried on raised beds over two days with constant stirring to preserve vibrant flavors and layered complexity. The coffee bursts with brightness, intricate fruit and floral nuances, and a beautifully balanced profile. Tasting reveals an explosion of bright stone fruits with subtle hints of wild floral, reminding of magnolia blossoms during a mixed forest trek. Balanced acidity, medium body, and a long aromatic aftertaste provide an unforgettable sensory journey.
