Ripe cherries were pulped to remove the skin and pulp while retaining the mucilage on the beans. The initial fermentation broke down the mucilage, followed by thorough washing. A second controlled fermentation ensured complete dissolution of any remaining layers, after which the parchment was left clean. The beans were then dried on raised beds under the mountain sun, allowing for gradual moisture stabilisation. This double-washed method produces a cup that is bold, clear, and refreshingly juicy.
