SWEET & CITRUS Classic Coffee introduces our new single-origin microlot from Harley Estate - Pichia Coffee Ripe coffee cherries are washed and left to ferment overnight with a special yeast which helps break down the acids present to create a unique flavor profile. After the fermentation, the cherries are shifted to raised drying beds and raked continuously for even drying. This controlled fermentation and drying process has given this coffee a burst of floral & sweet citrus notes
