A 100% Arabica from Kaapikaadu in Karnataka, grown by Mr. Lobo. Whole cherry, sealed away from oxygen, fermented with EM5 — a live culture rather than a lab strain, which keeps the ferment slow and the acidity round instead of sharp. Dried on the fruit and roasted medium light. The date and the cocoa carry the weight; the sweet lime is what stops it going heavy.
