Elevation: 1150MASL Variety: Chandragiri Processing: Yellow Honey Fermentation: Sugarcane Co-Ferment Roast: Light Producers: Kelachandra Coffee Works Tasting notes: Plum, Milk Chocolate, Fresh Tropical Fruits This year, the team at Kelachandra stepped up their efforts and from their Jensury Estate they gave us a beautiful Sugarcane fermented honey process Chandragiri that stood out most of the other coffees we tasted with regards to just how clean and fresh the coffee tasted. Being a relatively lower in elevation, the team had to work very hard, and had to be dilligent in the fermentation and the drying to ensure that the coffee tasted sweet, bright and complex, just the way we like them. We first tasted this coffee at the IICF at their stall and some other roaster had booked the entire lot, but on first sip we knew this coffee deserved to be brewed by the best brewers in the country so Shivansh sweet talked his way into getting us the entire lot! Over the last two years, we have really enjoyed Chandragiris, and some of our favourite coffees from the the last two years have been Chandragiris. This Chandragiri has again been one of the stand out coffees for this year, and we're quite glad that a variety that's uniquely Indian keep cropping up in our favourite coffees year after year. We feel that Chandragiris have a naturally high sweetness compared to some other varieties especially as light roasts, and this coffee lives up to our expectations. Ripe cherries were picked, sorted, cleaned and then pulped leaving a little bit of mucilage. They were then fermented for 24 hours in sugarcane pulp, which introduces extra sugars loads of fun microbial activity which has increased the overall sweetness, and the notes of tropical fruits in the cup. With our light roast, we feel we were able to bring out a lot of that inherent sweetness and notes of fresh tropical fruits. The lower elevation seems to have kept a balancing note of milk chocolate, which is complemented by a bright top note of Plum and a fresh tropical fruit sweetness. Give around 8-10 days before you start brewing this one!
