Honey process removes the cherry skin but leaves the sticky mucilage layer on the bean during drying. The colour label — yellow, red, black — indicates how much mucilage stayed on and how long it dried, which shapes sweetness, body, and fruit intensity. India's specialty estates have produced 81 honey-process coffees across 42 roasters, making it one of the more widely available processing categories in the Indian catalog.
Honey process isn't a single method. It's a spectrum defined by how much of the coffee cherry's sticky mucilage layer remains on the bean during drying, and that position maps closely to what the cup tastes like. The colour labels — yellow, red, black — are the producer's way of communicating where on that spectrum a given lot sits. Once you understand what they measure, the label becomes a usable guide.
Note: The name comes from the texture of the mucilage-coated beans during drying, which looks and feels honey-like. No honey is added at any stage of processing.
What honey process actually involves
The coffee cherry has several layers: the outer skin, a layer of fruit pulp, a sticky mucilage layer (composed largely of pectin and fruit sugars), the parchment, and the seed. Processing is the work of removing these layers before the bean can be dried and milled.
Washed processing removes the skin and all mucilage before drying. Natural processing dries the whole cherry intact, skin and all. Honey sits between them: the skin is removed by a machine called a depulper, but some or all of the mucilage layer is intentionally left on the parchment-covered bean. The bean then goes to a drying bed or patio with that mucilage still attached.
Drying runs 10–20 days, longer than washed (7–14 days) and shorter than natural (15–25 days). During that time, the sugars in the mucilage interact with the bean as it dries, shaped by how much mucilage remains, the temperature, the airflow, and whether the beds are in direct sun or shade.
Water use is low relative to washed coffee. Only the depulping step requires water; there is no fermentation wash or rinse cycle. Studies comparing the two methods report water reductions of 87–95%.[^1]
The Coffee Board of India has no formal classification for honey-processed coffee. The designation appears on Indian retail packaging at the producer's or roaster's discretion, with no standardised mucilage-level definition attached to it. That absence shows up in the catalog: roughly 60 of those 81 coffees carry no sub-type label. The term marks a category, not a production specification.
Yellow, red, black: what the colours mean
The colour classification reflects two variables: how much mucilage is left on the bean, and the drying conditions. More mucilage, slower drying, and heavier shade produce darker colour classifications and more flavour intensity.

On unlabelled lots: Most honey-process coffees sold by Indian roasters carry no colour designation. When the bag says only "honey process," mid-range mucilage retention with moderate drying time is the most common approach, and the cup usually falls between yellow and red in character.
The sub-types are not a quality ranking. Yellow honey dried carefully can score higher than a poorly executed black honey. The colour reflects a flavour direction. Drinkers who prefer washed coffee's clarity will generally find yellow honey more accessible; those who already drink naturals will find red or black honey closer to familiar territory than yellow.

Honey-process coffees on ICB number 81 across 42 roasters, 6.5% of the total catalog. Eighty of those 81 are in stock, which indicates honey has moved past the experimental-lot phase. At the estates that do it, it is a production staple.
India adopted honey processing in the mid-2010s, following the method's origins in Costa Rica, where it was commercialised in the early 2000s and gained profile after producer Juan Ramón Alvarado won the 2006 Cosecha de Oro competition with honey-processed lots. Indian adoption was driven by specialty market demand: roasters wanted processing variety in their catalogues, and honey offered a lower-investment path than natural, with shorter drying times and lower defect risk at volume. Roasters created the demand first; estates built the drying infrastructure to meet it.
Chikmagalur accounts for the largest share, with Baba Budangiri contributing a concentration of its own. Salawara Estate in Sakleshpur produces the most honey lots in the catalog (8 coffees), including named yellow and red honey variants sourced by Bloom Coffee Roasters. Baarbara Estate contributes 6 coffees. Ratnagiri Estate in Baba Budangiri, run by Ashok Patre, introduced honey lots in 2016 and now accounts for 4 catalog entries. Harley Estate in Sakleshpur, established 1864, produces black honey. In Coorg, Venkids Valley Estate offers named yellow and red honey variants. In Koraput, Madhu Agro Plantation produces a "48-hour fermented black honey" that combines mucilage retention with a brief controlled anaerobic fermentation before drying. That entry — from a region better known for cooperative naturals than monitored drying — is the clearest sign in the catalog that honey has spread beyond its Western Ghats starting point.

What honey-process coffees from India actually taste like
ICB's 81 honey-process coffees skew toward confectionery sweetness and mild fruit rather than the intense fermentation or wine-adjacent notes that naturals can produce.
Caramel, dark chocolate, fresh berry, and milk chocolate lead the catalog. Natural-process coffees more often peak at dried fruit, jam, and wine-like fermentation. Washed coffees read as brighter and more acidic. Honey falls between them: sweet, with fruit present but not sharp. With 80 of 81 honey coffees currently in stock, that middle-ground flavour profile appears to have found consistent demand. Honey is not a specialty-tier experiment in the Indian market; it has become a production staple.
Roast level shapes this further. The 37 medium and light-medium honey coffees in the catalog tend to carry more fruit character. The 20 medium-dark and dark ones shift toward chocolate and toast. A buyer who usually drinks medium-roast washed will likely find a medium-roast honey coffee familiar in structure, with added sweetness as the main difference.

How to choose a honey-process coffee
The colour sub-type, where labelled, is the most useful information on the bag. Without it, roast level and region can guide the choice.
Buyers who typically drink washed coffee will find yellow honey the lower-disruption option. Mucilage contact adds sweetness and a slight increase in body, but the cup stays relatively clean. The fruit notes are mild.
For buyers who already drink naturals, red or black honey offers comparable sweetness without the wine-like fermentation that some natural lots carry — the same sweetness direction, with a cleaner finish.
For buyers without a strong preference, a medium-roast honey from a named region — Chikmagalur, Sakleshpur, or Coorg — with no sub-type label is a reliable starting point. These lots are produced in volume and tend to be consistent.
Reading an unlabelled bag: When a bag says "honey process" without a colour designation, check the roast level as a secondary guide. Light and light-medium roasts tend to preserve more fruit character; medium and medium-dark lean toward caramel and chocolate. Roasters who label the sub-type are generally signalling that drying conditions were monitored and controlled — the label is a signal of that precision.
Brewing honey-process coffees
Honey coffees develop body quickly during extraction. Over-extraction muddies the fruit notes and can push the cup toward a boozy or rough quality. A useful starting point: brew slightly more deliberately than you would for washed coffee, with a bit more attention to contact time.

Yellow honey suits pour-over well. Paper filtration keeps the cup clean and preserves the mild fruit and sweetness without amplifying body. Red and black honey respond better to immersion brewing (French press, AeroPress), where longer contact time works with their naturally heavier body. Immersion is also more forgiving on extraction timing, which matters for black honey lots where a pour-over that runs long can occasionally turn rough.
Troubleshooting: If the cup tastes hollow or thin, grind one step finer before adjusting dose. If it tastes boozy or rough (over-extracted ferment notes), lower the water temperature by 1–2°C and shorten contact time.
