About Dunduga Estate
Dunduga Estate grows coffee under the shade of pepper vines, areca palms, and native trees such as jackfruit, mahogany, rosewood, mango, and cedar. The washed process helps bring clarity and consistency to the coffee. After harvest, the cherries are carefully sorted to remove any underripe or damaged fruit. The selected cherries are fermented for 12 to 24 hours, allowing the fruit sugars and mucilage to break down naturally. Once fermentation is complete, the coffee is thoroughly washed with clean water to remove any remaining mucilage. This process enhances the coffee's clean, uniform profile while highlighting its unique smoky character. The beans are then dried under the sun or in dedicated drying facilities until they reach the ideal moisture level for storage and roasting. This washed coffee from Dunduga Estate has a smoky profile, with notes reminiscent of Turkish tobacco.
