Bindiga Raspberry Red Honey

A vibrant expression of Bindiga Estate, crafted through a carefully controlled red honey fermentation with fresh raspberries. The coffee cherries are first floated to remove low-density cherries, ensuring only the denser, higher-quality fruit moves forward. The selected cherries are then pulped using the red honey process, leaving a portion of the mucilage intact. The coffee is placed in a fermentation tank with fresh raspberries and water and allowed to ferment for approximately 72 hours. No commercial yeast, added cultures, or additional microbes are introduced. Instead, the natural microorganisms present on the raspberries are allowed to initiate and guide the fermentation, creating a distinctive interaction between the coffee and fruit. The result is a coffee with a vibrant raspberry character, layered fruit complexity, lively acidity, and a naturally fermented sweetness, while retaining the character of the underlying Bindiga Estate coffee.
