Excelsa coffee from Mooleh Manay Estate in Coorg, India. This rare species is grown on a 75-acre estate with clay-loamy soil and 65 inches of rainfall. The cherries are hand-picked, fermented naturally with yeast in oxygen-restricted tanks for carbonic maceration over 84 hours, then dried on raised beds and rested for two months. The cup profile includes layered berry complexity, sweet cherry, and lychee notes, and it naturally has low caffeine content (0.9–0.98%).
