For our second collaboration with brothers Sharan and Eshwar Gowda, we bring you Zest Bomb, a showcase lot from Salawara Estate that perfectly balances zest and sweetness. Its remarkable complexity and depth are achieved through an innovative process: specific yeast cultures are applied to semi-pulped cherries, followed by a 72-hour anaerobic fermentation. Our omni roast is designed to maximize the coffee’s vibrant fruit character while preserving that signature zesty finish. Exceptionally versatile, Zest Bomb shines across most brewing methods, consistently delivering clarity, sweetness, and balance. Located in the lush foothills of India’s Western Ghats near the Sakleshpur/Belur region, Salawara Estate spans an impressive 145 hectares. Established by the British in the late 1880s, this venerable estate has thrived under the stewardship of the YDN group for three generations. The estate’s name, Salawara, translates to “string of blessings,” aptly reflecting its rich agricultural bounty. Its coffee cultivation is uniquely intercropped with pepper, areca nut, oranges, and silver oak trees, creating a balanced tapestry of richness and heritage. This harmonious integration not only enhances the soil’s fertility but also contributes to the nuanced flavors of the coffee. Salawara Estate’s dedication to excellence is exemplified by its accolade as the recipient of the Best Quality Bean Award from Ernesto Illy in 2018, highlighting its commitment to quality and sustainable practices.
