72-hour culture process (yeast and lactobacillus fermentation in a CO2-rich environment, then 25 days slow-dried on raised beds) on Red Catuai arabica from Ratnagiri Estate, Pearl Mountain, Karnataka, grown at 1,350m. Bright citric-malic acidity, satiny medium body, and a long, crisp jasmine finish. Tasting notes: jasmine, bergamot, water apple, dried plum. Cupped at 88.25.
