This lot comes from Ratnagiri Estate’s Line Patte block, where SLN 9 is given a more experimental treatment through fermentation and drying. The cherries spend 48 hours fermenting whole with an inoculated LAB microbial culture before moving into a dark room for 14 days of drying. That combination shifts the cup away from a straightforward natural profile and into something more layered: bright red fruit at the front, with a deeper, vinous quality unfolding through the finish.
