A coffee that doesn’t taste like coffee. The first release in our Exotic series. A specialty Liberica from MY LIBERICA — a 50-acre farm in Simpang Renggam, Johor, run by Jason Liew. In 2020, the farm partnered with Sasa Sestic, 2015 World Barista Champion, to develop the anaerobic process you’re holding now. Liberica is roughly 1% of the world’s coffee. Most of us have never tasted it. This lot — N26 — ferments in sealed barrels at a controlled temperature for 26 days, then dries inside a temperature- and humidity-controlled greenhouse. The result softens the variety’s traditionally smoky edge and brings forward something else entirely.
