Catuai cherries harvested at 25.6 Brix fermented anaerobically for 48 hours inside sealed bio-fermenters with Intenso microbes, then slow-dried on raised beds for 23 days using a natural process. The cup offers punchy red fruits, sparkling acidity, and layered sweetness with a harmony of crispness and brightness.
