CT Estate Golden Jaggery is a shade-dried red honey process coffee produced by Sufyan at CT Estate in Chikmagalur. The cherries are pulped and dried with part of their mucilage intact, enhancing sweetness and fruit depth. Drying is done entirely under shade at approximately 1150 MASL with temperatures below 33°C, resulting in slower dehydration, higher clarity, richer caramelized sweetness, and a smooth clean cup with no harsh drying notes. The coffee features varietals Chandragiri & 5B. Tasting notes include caramelized jaggery, golden peach, hazelnut spice, plum honey, and stone fruits. The cup is warm and indulgent with deep jaggery tones, soft peach brightness, gentle spice, and a honeyed finish. Acidity is medium–high, body is medium/syrupy, bitterness is low, and sweetness is high.
