Our Grape Fermentation process marries the sweetness of ripe grapes with the complexity of specialty coffee. Grapes and coffee cherries, both at peak ripeness, are combined after the grapes are crushed to release their juice. The blend is fermented for several days, allowing fruit sugars and aromatic compounds to infuse deeply into the coffee. Once optimal fermentation is reached, the coffee is washed for clarity and slow-dried under the sun to lock in flavor.
