Ripe coffee cherries are selectively harvested from the Nandi Block and immediately washed to remove impurities, followed by de stoning and careful floater removal to ensure only high-quality cherries are processed. The cherries are then depulped, intentionally retaining a layer of mucilage. A specially selected yeast strain is added at this stage to support controlled fermentation and enhance flavor development. With the mucilage still intact, the coffees are transferred to raised beds and sun-dried in a carefully controlled environment. This slow and attentive drying process allows the sugars in the mucilage to interact with the coffees, resulting in a bold cup profile marked by complexity, depth, and layered sweetness.
