This extremely limited nanolot from Ratnagiri Estate, Chikmagalur marks a special milestone, the first harvest of Pacamara on the estate. Known for its large bean size and distinctive cup profile, Pacamara as a varietal brings both intensity and elegance, making this release a rare opportunity to experience its character in a new terroir. The cherries undergo 42-hour anaerobic fermentation with nitrogen gas, creating an oxygen-free environment that enhances aromatic precision. The coffee is then depulped and washed, refining clarity, before being dried on raised beds for 19 days to build balance and structure. The result is a vibrant, fruit-forward profile, opening with crisp red apple and kiwi. A bright, tropical acidity is balanced by the delicate sweetness of starfruit, while honeysuckle florals bring a lifted, aromatic elegance. Best suited for filter brewing methods like Pour-over, French Press and AeroPress, where its clarity, brightness, and layered complexity can be fully appreciated.
