“Mosto” refers to the sweet, fermented juice extracted from coffee cherries or their mucilage, rich in natural sugars, acids, and a diverse microbial culture of yeasts and bacteria. Fresh coffee cherries are placed in large, food-grade barrels, and “musto” from a previous batch of natural coffees is added to accelerate fermentation and enhance complexity. The coffees are then slow-dried using a nursery-style drying method.
